These flightless birds are in the ratite family, and like their distant gamebird cousins chicken and turkey, there is very little intermuscular fat in ostrich meat. Boerewors (pronounced BOO-ruh-VORS) is a regional South African sausage with a flavor profile from coriander, nutmeg and allspice. Perfect for the grill, the name means “farmer’s sausage” and comes from a combination of the Afrikaans words boer (‘farmer’) and wors (‘sausage’). Our Boerewors includes a small amount of fatty pork to enhance grilling properties.
